Ingredients
1 kg (2 lb) beef short ribs, butterflied Korean style or thinly sliced through the bone
1 tbsp vegetable oil, for cooking
1/3 cup soy sauce
1/4 cup brown sugar
2 tbsp mirin
1/4 cup onion, finely grated
1/4 cup nashi pear, finely grated (or red apple/pear)
2 tsp garlic, finely grated
2 tsp ginger, finely grated
2 tbsp water
1 tbsp toasted sesame oil
1 tsp black pepper
Green onion, sesame seeds, coriander/cilantro leaves
Kimchi fried rice
Ginger smashed cucumbers
Directions
Step 1: Make Marinade
Whisk together all marinade ingredients in a bowl until well combined.
Step 2: Marinate Beef
Place beef in a ziplock bag, glass or ceramic container. Pour over marinade, mix well to coat, cover, and refrigerate for 24 hours.
Step 3: Prepare Cooking Surface
For BBQ: Heat grill on high until smoking hot. Brush with vegetable oil. For stovetop: Heat skillet with vegetable oil over high heat.
Step 4: Cook Beef
Remove beef from marinade and discard marinade. Grill or sear beef 2–3 minutes per side until caramelised. Thin slices cook quickly, so overcooking is fine, the marinade keeps them tender.
Step 5: Serve
Transfer beef to a platter, loosely cover with foil for a few minutes. Garnish with sesame seeds, green onion, and coriander. Serve with Korean sides like kimchi fried rice or smashed cucumbers.
