Why Grass Fed Matters on a Lean Cut
Topside is naturally lean, so what the animal ate shows up clearly in the flavour. Grass fed beef has a more pronounced, mineral driven taste and a firmer texture than grain fed, and on a cut with little intramuscular fat to soften things, that flavour is the whole point.
It also means you should treat this cut with respect. Lean beef does not forgive overcooking, and topside cooked past medium is the reason people think roast beef is dry. Cooked properly it is superb.
Packaging and Storage
Each piece is cryovac sealed at the butchery and packed into an insulated box with freezer packs for transit. Keep refrigerated below 4°C and use within 5 to 7 days while sealed. To freeze, store at minus 18°C for up to 12 months. Defrost in the fridge over 24 to 48 hours and never refreeze once thawed.

Cooking and Flavour
Flavour and Texture
Topside has a clean, direct beef flavour with very little fat to round it off. The grain is tight and uniform, which is exactly what you want for thin slicing. Cooked correctly it is tender and juicy. Cooked too far it turns dry and grainy, and no amount of gravy fixes that.
How to Cook Topside
Roast Beef
Tie the piece evenly, salt heavily and leave uncovered in the fridge overnight. Sear all sides hard, then roast at 160°C for around 25 minutes per kilogram. Pull at an internal temperature of 55°C for medium rare and rest for a full 20 minutes. Carve as thin as you can manage, across the grain.
Corned Silverside Style
Brine for 5 to 7 days in a salt, sugar and pickling spice solution, then simmer gently at around 85°C for 3 hours until a skewer slides in with no resistance. Never boil it.
Schnitzel and Stir Fry
Part freeze the piece for an hour to firm it up, then slice against the grain as thinly as your knife allows. Crumb for schnitzel or sear fast and hot for stir fry.
Pro Tip
A probe thermometer matters more on this cut than on any steak. There is no fat buffer, and the difference between excellent and disappointing is about five degrees.

What does denuded mean on a beef cut?
Denuded means the external fat cap and the silverskin membrane have been trimmed off at the butchery. You get a clean, ready to cook primal with almost no waste, so more of the weight you pay for ends up on the plate.
What is the difference between topside and silverside?
Both come from the hind leg. Topside sits on the inside of the leg and is slightly more tender with a finer grain, which suits roasting and thin slicing. Silverside sits on the outside, is a little tougher, and is the traditional corning cut. Topside can be corned too and many people prefer it.
Is topside good for roast beef?

Topside comes from the hind leg, a muscle group that works harder than the loin, so it is less tender than a striploin or eye fillet and prices accordingly. It is not lower quality beef, it just needs the right cooking method. For roasting, corning and slicing it outperforms cuts costing three times as much.
