1 lb (450 g) 80/20 ground beef (85/15 or 90/10 if preferred)
1 tbsp butter, tallow, or ghee
1–1½ tsp kosher salt, to taste
¼ tsp freshly ground black pepper (optional for strict carnivore)
2–3 tbsp beef broth or water for quick au jus
1–2 tbsp heavy cream for a silky finish
2 oz shredded cheese (cheddar, provolone, or Gruyère)
2 large eggs
2 tbsp cooked bacon bits
Pinch of garlic or onion powder (if allowed)
Few dashes Worcestershire sauce (optional)
Fresh herbs for garnish (optional)
Directions
Step 1: Heat Skillet
Preheat a 12-inch cast-iron or stainless steel skillet over medium-high heat. Add butter or tallow and melt until shimmering.
Step 2: Brown Beef
Crumble in the ground beef in large chunks. Season with salt and pepper. Let the bottom sear undisturbed for 2 minutes. Break into bite-sized pieces and spread out, allowing deep browning for 2–4 minutes.
Step 3: Manage Fat & Texture
Spoon off excess fat if skillet floods, or add a touch more if dry. Taste and adjust seasoning. Optional: add garlic or onion powder.
Step 4: Optional Sauce or Cream
For au jus: splash in 2–3 tbsp beef broth/water and scrape the fond, simmer 1–2 minutes. For creamy finish: add 1–2 tbsp heavy cream and stir to coat. For cheesy version: sprinkle shredded cheese on beef, cover 1 minute to melt.
Step 5: Optional Eggs or Bacon
Push beef aside, crack 2 eggs into open space, reduce heat to medium, cover 2–3 minutes until whites set and yolks are runny. Sprinkle bacon bits if desired.
