These smash burger patties are designed for maximum flavor and texture, with lacy, crispy edges and a juicy, melty center. Using high-fat beef and the smash technique creates a restaurant-quality crust in minutes.

Lay out the burger toppings on the bottom half of the bun. Keep them ready for assembly.
Step 2: Preheat Pan
Heat a large stainless steel sauté pan or cast-iron skillet over high heat for 2 minutes until very hot.
Step 3: Smash Patties
Place two balls of beef in the pan. Immediately smash them down with a stiff metal spatula, using a second spatula for pressure. The patties should be slightly wider than the bun.
Step 4: Season and Sear
Generously season the exposed surface with kosher salt and black pepper. Cook 45–60 seconds without pressing again, allowing a deep brown crust to form.
Step 5: Scrape and Flip
Use a bench scraper or spatula to lift the patties, including all browned bits. Flip carefully.
Step 6: Add Cheese and Stack
Immediately place a slice of cheese on one patty and stack the second patty on top. Remove from pan and transfer to the prepared bun.
Step 7: Assemble and Serve
Add toppings of choice, cover with the top bun, and serve immediately while edges remain crisp.
