Ingredients
2 eye fillet steaks (180–220 g each)
2 rashers streaky bacon
Salt
Freshly cracked black pepper
1 tbsp olive oil
2 tbsp unsalted butter
2 tbsp softened butter
1 tsp chopped fresh parsley
1 tsp chopped fresh thyme
Pinch of salt
Directions
Step 1: Wrap the Steaks
Remove steaks from the fridge 30 minutes before cooking. Pat dry and season lightly with salt and pepper. Wrap one rasher of bacon around the side of each steak and secure with kitchen string or toothpicks.
Step 2: Prepare Herb Butter
Mix butter, parsley, thyme, garlic, and salt. Shape into a small log using baking paper and chill briefly until firm enough to slice.
Step 3: Preheat the Pan
Heat a heavy oven-safe pan over medium-high heat. Add olive oil and allow it to shimmer.
Step 4: Sear the Steaks
Place steaks in the pan and sear for 2 minutes on the first side. Turn and sear for another 2 minutes. Rotate slightly to crisp the bacon edges.
Step 5: Finish in the Oven
Transfer the pan to a preheated oven at 180°C. Cook for 5 to 8 minutes, depending on thickness.

Step 6: Rest Before Serving
Remove steaks from the oven and rest on a warm plate for 5 to 8 minutes. Remove string or toothpicks before serving.
Step 7: Add Herb Butter
Mix softened butter with parsley, thyme, and salt. Place a spoonful on top of each rested steak and allow it to melt over the bacon and beef. Serve immediately while warm.
