About the Cut: Scotch Cube Roll
Scotch cube roll, ribeye, and scotch fillet are all names for the same primal, taken from the rib section before it is sliced into steaks. Buying it whole means you control the thickness of every steak you cut.
The eye of the cube roll is the tender centre. The spinalis, the muscle wrapping the outside of the eye, is the most marbled and most sought after part of the whole animal. On a MB7-8 piece, that spinalis is exceptional.
Best Ways to Cook It Right
Wagyu at this marble score needs less heat and less time than you think. Thaw slowly in the fridge over 24 to 48 hours, then bring to room temperature before cooking.
Cut steaks 2.5cm to 3cm thick. Season with salt only, at least 30 minutes ahead. Sear hard for 90 seconds to two minutes per side in a dry, screaming hot pan. The fat content means you need no added oil. Pull at an internal temperature of 52°C for medium rare and rest for 8 to 10 minutes.
Do not cook past medium. The marbling that makes this cut worth buying renders out entirely past 60°C and you are left with a dry, expensive steak.
