Omugi: Barley Fed Japanese Style
Omugi is the Japanese word for barley, and the program is built around a barley based grain ration. Barley finishing produces a firmer, whiter fat and a slightly sweeter flavour profile than a corn heavy feed.

Short ribs are full of collagen. Cooked fast, that collagen stays tight and the meat is tough. Cooked slow and long, it breaks down into gelatin and the meat goes from chewy to falling apart.
There is no shortcut. The window is somewhere between 8 and 12 hours at low temperature, or 3 to 4 hours braised. What you get at the end is a texture no fast cooking cut can produce.

Best Ways to Cook It Right
Thaw slowly in the fridge over 24 to 48 hours.
For smoking, trim the hard fat cap back to about 5mm, leave the membrane on the bone side, and season heavily with just salt and coarse pepper. Smoke at 120°C until the internal temperature hits 96°C to 98°C, usually 8 to 10 hours. Rest wrapped for an hour before serving.
For braising, sear the pieces hard, then cook covered in stock and red wine at 160°C for 3 to 4 hours until a fork twists free with no resistance.
Do not trust time alone. Short ribs are done when they probe like soft butter, not when the clock says so.
Flavour Profile: Rich, Deep, Unctuous
Short rib is one of the most intensely beefy cuts on the animal. The barley finished fat brings a clean sweetness that balances the depth.
Serve with something sharp to cut through it. Pickles, a vinegar slaw, kimchi, or a sharp mustard. Korean galbi preparations exist for exactly this reason.
