Why Vaucluse gets it fresh

Buying by grade rather than by price

The eastern suburbs are not short of places selling expensive steak. Fewer will tell you the farm it came from, what it was fed and what it graded before you pay. Every Carnivore Society product page states the producer, the feed type and the marble score, and every cut is MSA graded, hormone free and antibiotic free. If a claim is not on the page, we are not making it.

Marble score shapes how a steak eats more than the cut does. MB2 to MB4 grass-fed tastes beefy rather than rich and suits roasting. MB6 and above is Wagyu territory, best cooked hot and fast. Paying for MB9 and taking it to medium-well wastes both the marbling and the money.

Cut to order after you buy

Nothing sits pre-cut in a display case. Your order is broken down, trimmed and vacuum sealed at Thomastown after you place it, then packed with chilled gel packs into an insulated box rated for 24 hours in transit and a further 12 hours on the doorstep. If you want a scotch cut thicker than standard or a primal left whole for a dinner, say so in the order notes.

Chilled, never frozen

Orders arrive chilled unless you specifically request otherwise, with up to 10 weeks of refrigerated shelf life from packing while the cryovac seal stays intact.
